Rice Pudding

 

2 cups cooked rice (1 cup raw), do not wash rice

¼ teaspoon salt

1-teaspoon vanilla

½ teaspoon lemon rind

1 ½ cups milk

1/3-cup sugar

3 eggs beaten

1 teaspoon lemon juice

½ cup raisins

 

Combine all ingredients except lemon rind, lemon juice and raisins, in medium size bowl. Grease a baking dish and pour pudding mixture into it. Bake in preheated 325-degree oven. After pudding has been baking for 20 minutes, add the lemon rind, lemon juice, raisins and stir gently for ½ minute. Adding the raisin at this time insures that they will be mixed into the pudding and won’t sink to the bottom as sometimes happens. Bake 30 minutes longer.
